Fresh Squash and Apple Recipes

Enjoy the following tested and approved Fruit Ridge Hayrides recipes for apples and squash.

Squash Apple Bake

  • 2lbs squash (Butternut or Buttercup) peeled and cut into ½" slices
  • 2 baking apples (Spy or Rome) cored and cut into ½" slices
  • ½ cup brown sugar
  • ¼ cup melted butter
  • 1 T. flour
  • 1 t. salt
  • ½ t. mace

Layer squash and apples in ungreased 11x7" baking dish. Mix the rest of the ingredients and pour over top. Bake at 350° 30-45 minutes until tender.

Apple Crisp

  • 4-6 Baking apples (Spy or Rome) pared and sliced
  • ¼- ½ cup white sugar
  • ¾ cup quick oats
  • 1 teaspoon cinnamon
  • ¾ cup brown sugar
  • ½ cup butter
  • ½ cup flour
  • Sprinkle nutmeg

Mix apples and white sugar in 8x8" baking pan. Mix all other ingredients and sprinkle on top. Bake at 350° for 35-40 minutes until fork tender. Double for 9x13"pan.

Hot Apple Cider

  • 1 gallon apple cider
  • ½ cup brown sugar

Mix the following in cheese cloth:

  • 2 teaspoons whole allspice
  • 2 sticks cinnamon
  • 2 teaspoons whole cloves

Simmer all ingredients for 20-30 minutes. Enjoy.

Michigan Apple Bread

Recipe by Doreen Arrington

  • 1 cup sugar
  • 8 oz. sour cream
  • 2 eggs
  • 2 t. vanilla
  • 2 cups flour
  • 2 t. baking powder
  • ½ t. baking soda
  • 1 ½ cups baking apples, peeled and chopped
  • 1 cup pecans

Topping:

  • ¼ cup butter
  • ¼ cup brown sugar

Beat sugar, sour cream, eggs and vanilla until combined and then beat on medium 2 minutes. In a separate bowl, combine flour, baking powder, soda and salt. Add sour cream mixture and beat on low until combined. Mix in apples and ½ cup pecans. Pour into greased 9x5 loaf pan. Sprinkle with ½ cup pecans and press into batter. Bake 350° for 55 minutes. Cool in pan 10 minutes before removing. For topping, melt butter with brown sugar and drizzle over warm bread after removing from pan.

How to Bake a Squash

  • Select a squash of any size or shape.
  • Wash the squash and cut in half. Clean out seeds and pulp.
  • Place cut side down on baking sheet filled with 1 inch of water.
  • Bake at 350° until the skin is soft when pierced with a fork (45min. to 1 ½ hours).
  • Scoop orange flesh from skin and serve.
  • Good with butter and salt and pepper or butter and brown sugar.
